If you want to keep this egg dough, BE CAREFUL! This contains raw egg and this dough should only remain safe in the refrigerator for up to 3-days. Use discretion! Internal temperatures should be between 190-205F to be done. Increasing oven temperatures may help with achieving the desired color faster; however, may also give a larger oven spring causing the challah to have rips in the braids to appear. Every oven is different - Don't give up when trying new things! Mix the bucket ingredients (and the 4 eggs, lukewarm water, and sugar) either by hand or in the stand mixer (preferred). Mix until nothing dry is left. Then let it rise in the bucket for 2 hours. Placing the bucket in the oven without any heat but by just turning on the light, will help the rising process.

Punch down the risen dough a little so you can secure the lid, and refrigerate overnight. Use 3 handfuls of 500g of dough. You’ll have a small amount left over. This is the whole bucket. You could also use less than 500g to braid a smaller loaf.
Roll out three 1-inch-thick ropes.
Let the newly stretched gluten adjust to the new shape while the oven preheats to 375-400F. About 20 minutes. Shown to compare what the 500g of dough ropes are turned into. This is a 18x13” inch standard large cooking sheet.
Braid the rested dough ropes. To braid the three dough ropes: First, lay the ropes out on the surface so that they are evenly spaced. Cross the left strand over the middle strand, then cross the right strand over the new middle strand. Continue this pattern, crossing the left strand over the middle strand and then the right strand over the middle strand, until you reach the end of the dough ropes. Tuck in both ends under themselves.
Add Egg wash evenly around the loaf and add your choice of toppings.

Bake for about 20 minutes and remove.
Add another coat of egg wash.

Bake for about another 20-30 minutes or until achieving the desired color.
Cool on a rack before serving.
