- 1 pound Breakfast Sausage Browned
- 1½ Cup Cheddar Cheese shredded
- 2 Cups Milk Whole is Preferred
- ½ tsp Salt To taste
- 1 tsp Pepper Also to taste
Prepare the Dough
Before using your dough from Bucket of Bread brand baking kits, remove 4 tablespoons of the flour component and set it aside. Then, mix the dough with approximately 1¼ cups of lukewarm water instead of following the instructions exactly. This adjustment will make it easier to manipulate when rolling it out later. Once the dough has risen, preheat the oven to 400 °F and proceed with preparing the rest of this incredible breakfast.
Prepare The Breakfast Ingredients
To begin with this amazing breakfast, heat up 4 large eggs and scramble them. Set these to the side on a separate plate. You'll need them later.
Now that you have eggs, you'll need to brown 1 pound of your favorite breakfast sausage.
Drain the browned sausage through a colander saving the fats into a bowl. Set the sausage and the fat aside. You'll need them later.
Roll out your dough from 1 package of Bucket of Bread brand baking kit dough mix.
Then start turning it into breakfast with a good sprinkle of the sausage evenly onto the rolled out dough.
Additionally, save a good handful of sausage to add to the gravy later if you wish.
Subsequently sprinkle on the scrambled eggs.
Thirdly, from the 3 main breakfast ingredients, add the cheese (Woot-Woot for Wisconsin!).
Roll these all onto itself like you would with a cinnamon bun.
Place the roll onto a parchment or non-stick foil lined baking sheet. Bake for 20 minutes at 400 °F.
*If you didn't know, this is the basics behind a roux. Roux is a thickening agent made from equal parts fat and flour that's cooked on the stove until it reaches the desired level of brownness. The flour is added to melted fat or oil, blended until smooth, and then cooked. Roux can be white, blond, brown, or dark brown. The longer the roux is cooked, the darker it gets and the more toasty, nutty flavors and aromas it'll have.
Simultaneously while baking, equally (by weight) mix the sausage fat and the 4 TBSP of flour on a high heat stirring to thicken into a paste (about 40 g of each).
Then, reduce the heat to medium and slowly begin adding the milk. Stir constantly and pause the pouring as needed until it is well incorporated from a paste into a gravy consistency you want (typically 1½-2 Cups). While you do this, take your time.
Add the sausage if you decided to keep some for the gravy.
Add about ½ tsp of salt (to taste)
Add about 1 tsp of pepper (also to taste)
Share with Your Favorite People
Check the bake for a light golden color and/or a steady internal temp of 190 °F or higher.
Plate for cutting.
Slice out from the roll.
Serve warm by the slice.
